Zucchini!

We have Zucchini and Yellow Squash coming out our ears right now between my garden and my mother in-law’s garden. So I have been sautéing it or making bread with it. I think I need some other recipe ideas. Anyone?

Anywho, I have been tweaking a zucchini bread recipe. I still don’t have it perfect, but it is pretty darn good.

Zucchini Bread – makes 2 loaves

3 cups flour

1 teaspoon baking powder

1 teaspoon baking soda

2 teaspoons cinnamon

1/4 teaspoon nutmeg

1/2 teaspoon salt

3 eggs

1/2 cup oil (I do a mix of butter and coconut oil)

2 teaspoons grated lemon rind

1 tablespoon vanilla extract

1 cup sugar

1/2 cup honey

3 cups shredded zucchini

Preheat the oven to 350 degrees

Grease 2 loaf pans

Combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a large bowl

Combine eggs, oil, lemon rind, and vanilla in a large bowl

Add sugar and honey to egg mixture, stirring until combined

Add zucchini to egg and sugar mixture, stir until well combined

Add in the flour mixture, stir until just combined

Divide batter evenly between the 2 greased loaf pans

Bake at 350 for 45 – 60 minutes ( you want to have an inserted toothpick come out clean)

Cool 10 minutes in pan and then remove and place on cooling rack.

Allow to cool completely before slicing
