Tuesday

Aside from being awake half the night with a coughing Peanut, the day was pretty good. I brought K to work for 7:30, when I got back home the boys were still sleeping. I sat down with some coffee and brought up Revolution on Hulu. I think I like the show. I am not really attached to any shows yet this season. I got about half way through before I was joined by the boys.

It was chilly in the house, so  decided to make some cookies. You know, to warm up the house 🙂 I made some Pumpkin Chocolate Chip Cookies from My Baking Addiction. They are pretty delicious. Soft and cake-like. I made 36, there are now 14 left. . . . If you want the recipe, click here .

After picking K up from work, I laid down with Peanut to get him down for a nap and ended up napping myself. I needed it. I don’t get much sleep when the boys are sick.

Munchkin has been pretty low key due to this cold. Hubby set him up with some video games and K found him a leapster on Ebay. He has been pretty happy with those. He is on the mend now. I think yesterday was his worst day.

The night ended well. I got to give Milkies to a goat magnet, a deer magnet, and then finally a sheep magnet as well as Peanut. So silly.

This evening has ended with the smell of skunk filling the air. I was hoping it wasn’t our dogs. No such luck. Lily didn’t really get it, Sawyer got it pretty good. I have no energy to bathe him right now though. The house is a little stinky. As soon as I get back from bringing K to work in the morning, I will hose him down.

Buttermilk Oatmeal Chocolate Chip Muffins

We have a new favorite snack around here.

Buttermilk Oatmeal Chocolate Chip Muffins

They are pretty darn tasty.

We have been doing a lot with oatmeal lately. We have a lot of it, so I have been trying to use some of it up.

I can’t eat oatmeal without soaking it first and stumbled upon a recipe for soaking oats overnight in water and buttermilk. Then I stumbled across a muffin recipe. It was pretty basic and didn’t have a lot of flavor. I tweaked it a bit and everyone loves them. Well except for Munchkin. He ate one the first night and then wouldn’t touch them again. Oh well, his loss. ;p

I baked a double batch two nights ago and there are only five left. 🙂

I thought I would share the recipe.

Oatmeal Buttermilk Chocolate Chip Muffins

makes 12 muffins

Ingredients

1 cup oats

1 cup buttermilk

1 egg

1/2 cup all-purpose flour

1/2 cup whole wheat flour

1/2 cup sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 cup oil (I use coconut oil)

1 teaspoon vanilla extract

1/2 – 2/3 cup chocolate chips (depending on your preference for chocolate)

Directions

-preheat oven to 400 and grease muffin tin

-mix oats and buttermilk in large bowl, cover with a kitchen towel, and soak overnight.

-add in egg; mix well with mixer

-add sugar and mix well

-add other ingredients and mix well

-scoop by 1/4 cup into greased muffin tin

-bake in preheated oven for 15 – 20 minutes (my oven works well with 18 minutes)

-let cool about 10 minutes and then pop out of tin. Let cool the rest of the way on cooling racks

Some other things I am considering are adding cinnamon or cocoa powder. Can’t wait to make the next batch! 🙂

Zucchini!

We have Zucchini and Yellow Squash coming out our ears right now between my garden and my mother in-law’s garden. So I have been sautéing it or making bread with it. I think I need some other recipe ideas. Anyone?

Anywho, I have been tweaking a zucchini bread recipe. I still don’t have it perfect, but it is pretty darn good.

Zucchini Bread – makes 2 loaves

3 cups flour

1 teaspoon baking powder

1 teaspoon baking soda

2 teaspoons cinnamon

1/4 teaspoon nutmeg

1/2 teaspoon salt

3 eggs

1/2 cup oil (I do a mix of butter and coconut oil)

2 teaspoons grated lemon rind

1 tablespoon vanilla extract

1 cup sugar

1/2 cup honey

3 cups shredded zucchini

Preheat the oven to 350 degrees

Grease 2 loaf pans

Combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a large bowl

Combine eggs, oil, lemon rind, and vanilla in a large bowl

Add sugar and honey to egg mixture, stirring until combined

Add zucchini to egg and sugar mixture, stir until well combined

Add in the flour mixture, stir until just combined

Divide batter evenly between the 2 greased loaf pans

Bake at 350 for 45 – 60 minutes ( you want to have an inserted toothpick come out clean)

Cool 10 minutes in pan and then remove and place on cooling rack.

Allow to cool completely before slicing

Zucchini Bread!

Thoughts about sleep

It is amazing to me how differently the boys approach bedtime. They are complete opposites. Munchkin fights it and Peanut embraces it. I wonder if how we first approached sleep with them has some bearing. Munchkin was born in the hospital. He was taken to the nursery for those first few nights and brought in to me when he was hungry. When we got home, we swaddled him and put him in the bassinet right next to the bed. Eventually he ended up sleeping with us, but not before we tried getting him to sleep in his crib. Peanut was born at home and basically hasn’t left my side since. He has always had the security of me right there.

I know I have posted before about Munchkin’s trouble with sleep. He has fought it with every inch of his being since the day we brought him home. It didn’t/doesn’t matter what routines we employ. I guess he is afraid he will miss something important. It is getting easier (a very tiny bit at a time) as he is getting older though.

I guess I am the same way. I put off going to bed. I always have just one more thing I want to do. I remember staying up all night long during the summers. I would watch Nick at Night. I loved all those shows, Mister Ed, Patty Duke, Green Acres, etc. When we got a decent computer and an internet account(oh, dial-up days, how I don’t miss you), I would stay up and play around online. I frequented chat groups and copied anime images in my sketch pad. I also used to stay up all night baking. I tried all sorts of recipes. Cakes, cookies, meringues. . . My mom didn’t complain too much about that one 🙂

I still stay up late. I use the time to watch my TV programs that recorded earlier in the evening. It is impossible to watch them while the boys are awake. I get prep work done for the next day’s cooking when I can. I do some cleaning or laundry. I Facebook or blog(when my brain is functioning enough to get coherent thoughts across). I try to get in some time to just decompress from the day. Sometimes I even get to spend some quiet time with Hubby. Although the past few weeks he has been going to bed early. He has been getting up at *gasp* the same time as the boys and I in the morning because he has to address the puppy’s bathroom needs.

Oh yeah, did I mention we took in another dog?

Puppy.

He was only about 10 weeks old and 5lbs and sitting on the side of the road ALL day. So yeah, I took him home, but with the intentions of finding him a more permanent residence elsewhere. That backfired. It was love at first sight for Hubby. He is now 4 weeks older and 6lbs heavier (Puppy, not Hubby). He still has no name though. We just keep calling him Puppy. We did however manage to find Lucy the Beagle a home. I  hear she is doing well. I am waiting for pictures 🙂

Sorry for the tangent. Back to our regularly scheduled programming. . .

Peanut, on the other hand, loves sleep. He welcomes it with open arms. He doesn’t fight me when I pick him up to go into the bedroom. He knows that is where we are heading and starts blowing kisses to say goodnight. His sleeping habits have been a little off as of late, due to milestones and teething, but nothing like we used to deal with with Munchkin. Peanut needs time to unwind at night, but he wants to do it in the bed. I am so fine with this. It is really funny and super cute. He flops down and nurses, then jumps up and crawls around the bed giggling and making silly screeching noises. He stands up and flops himself down. If Hubby is in the bed because he is trying to get Munchkin sleeping, Peanut crawls over to him and plays games with him. Hubby tries to resist, but Peanut lays the charm and cuteness on thick and there is no resisting him. After about 20 minutes Peanut will finally lie down and nurse and fall asleep relatively quickly.

Usually we try to avoid putting the boys to bed at the same time, but sometimes it just happens that way. Tonight was one of those nights. Peanut was starting to show signs that he wanted to go to bed, so I got a diaper and pajamas ready. When I went to get him he was following Munchkin down the hall to the playroom. They started playing really well together so I let them keep at it. Munchkin started “reading” stories to Peanut. So incredibly sweet. I think they hung out together for close to half an hour. The playroom is destroyed, but they had fun and that is what matters.
