We have a new favorite snack around here.

Buttermilk Oatmeal Chocolate Chip Muffins

They are pretty darn tasty.

We have been doing a lot with oatmeal lately. We have a lot of it, so I have been trying to use some of it up.

I can’t eat oatmeal without soaking it first and stumbled upon a recipe for soaking oats overnight in water and buttermilk. Then I stumbled across a muffin recipe. It was pretty basic and didn’t have a lot of flavor. I tweaked it a bit and everyone loves them. Well except for Munchkin. He ate one the first night and then wouldn’t touch them again. Oh well, his loss. ;p

I baked a double batch two nights ago and there are only five left. 🙂

I thought I would share the recipe.

Oatmeal Buttermilk Chocolate Chip Muffins

makes 12 muffins

Ingredients

1 cup oats

1 cup buttermilk

1 egg

1/2 cup all-purpose flour

1/2 cup whole wheat flour

1/2 cup sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 cup oil (I use coconut oil)

1 teaspoon vanilla extract

1/2 – 2/3 cup chocolate chips (depending on your preference for chocolate)

Directions

-preheat oven to 400 and grease muffin tin

-mix oats and buttermilk in large bowl, cover with a kitchen towel, and soak overnight.

-add in egg; mix well with mixer

-add sugar and mix well

-add other ingredients and mix well

-scoop by 1/4 cup into greased muffin tin

-bake in preheated oven for 15 – 20 minutes (my oven works well with 18 minutes)

-let cool about 10 minutes and then pop out of tin. Let cool the rest of the way on cooling racks

Some other things I am considering are adding cinnamon or cocoa powder. Can’t wait to make the next batch! 🙂

Zucchini!

We have Zucchini and Yellow Squash coming out our ears right now between my garden and my mother in-law’s garden. So I have been sautéing it or making bread with it. I think I need some other recipe ideas. Anyone?

Anywho, I have been tweaking a zucchini bread recipe. I still don’t have it perfect, but it is pretty darn good.

Zucchini Bread – makes 2 loaves

3 cups flour

1 teaspoon baking powder

1 teaspoon baking soda

2 teaspoons cinnamon

1/4 teaspoon nutmeg

1/2 teaspoon salt

3 eggs

1/2 cup oil (I do a mix of butter and coconut oil)

2 teaspoons grated lemon rind

1 tablespoon vanilla extract

1 cup sugar

1/2 cup honey

3 cups shredded zucchini

Preheat the oven to 350 degrees

Grease 2 loaf pans

Combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a large bowl

Combine eggs, oil, lemon rind, and vanilla in a large bowl

Add sugar and honey to egg mixture, stirring until combined

Add zucchini to egg and sugar mixture, stir until well combined

Add in the flour mixture, stir until just combined

Divide batter evenly between the 2 greased loaf pans

Bake at 350 for 45 – 60 minutes ( you want to have an inserted toothpick come out clean)

Cool 10 minutes in pan and then remove and place on cooling rack.

Allow to cool completely before slicing

Zucchini Bread!

Chili on a rainy day

Happy Saturday!

It is a dreary day here in Mississippi. Cloudy, rainy, but I am still in a pretty chipper mood. The kiddos are in mostly good moods too. The laundry is mostly caught up and the house is, well, mostly clean. With 2 littles, 2 cats, 3 dogs(oh yeah, did I mention we took in another. . . ) and a husband with boots that track everything into the house, it is never all the way clean. I take what I can get.

Today I thought I would share this great chili recipe with you. It is healthy, delicious and frugal. I found it on Keeper of the Home‘s blog(well, she guest posted on The Nourishing Gourmet’s blog about it). I have made it the last 3 weeks and it is a hit with everyone except for Munchkin. He of course won’t even try it.  We eat it by the bowl with sour cream and shredded cheese or make nachos with it. However you choose to eat it, it is tasty and filling.

There is also a cornbread recipe in the post. I find it delish, but no one else in the house likes cornbread 😦
